Enjoying campfire cooking in the summer
Garden BBQs are always fun and even more so with deliciously easy recipes! Bonfires and grilling are great adventure for kids and lovely way to entertain guests too. Recently, we’ve had unexpected visitors so we decided to collect some veggies around the garden, marinate home-produced meat and make a little family BBQ. Today I’ll share a couple of filling and really easy BBQ recipes that we enjoyed! The best thing is that both recipes are made from scratch with homegrown ingredients so no hidden chemicals and other ugly additives here!
Campfire cooking
There is something really special about preparing food on an open fire, it gives the recipe such unique flavour of the burning wood. You can easily make these dishes on a built fire pit or a grill. And if you don’t have neither of these just use a few bricks to make a pit and put the cooking grid on over the flames. As long as the grid is stable to hold an iron tawa you’re good to go (or if you prefer – a frying pan). For dessert and a side dish you can also prepare the watermelon salad and healthy watermelon pizza! Especially the pizza is a refreshing summer recipe for kids of practically all ages!
Easy BBQ Recipes
Marinated Meat and Veggies Foil Packet
Preparation: 30 minutes
Cooking Time: 25 minutes
Serves: 10
Ingredients:
- 6 pieces of skinless chicken breasts
- 200g of sliced smoked bacon
- 5 fresh peppers (green, yellow or red)
- 5 medium onions
- 4 cloves of garlic
- juice from 1/2 of lemon
- salt
- whole cumin seeds
- ground sweet paprika
- 2 teaspoons of honey
- 2 tbl spoons of sunflower oil
- aluminium foil
Instructions
To make this delicious BBQ foil packet recipe, begin by marinating the meat for a few hours. Cut the chicken breasts in smaller long-ish pieces and put them in a bowl. Add squeeze in the garlic cloves, add sunflower oil, ground sweet paprika, lemon juice, 1 teaspoon of honey and salt and mix until all the meat is coated. Then leave in the fridge covered for a few hours to marinate.
In the meantime, cut the onions in large pieces, add a sprinkle of sunflower oil and the second teaspoon of honey and mix until coated. This simple step will help the onions to caramelize while grilling.
Then cut the potatoes in wedges, sprinkle with the cumin seeds and salt and mix thoroughly. Lastly, cut the peppers in large pieces and prepare long pieces of the aluminium foil to wrap the ingredients in.
To prepare the foil packets, take one large piece and place it on the kitchen surface. Wrap a piece of chicken in a slice of bacon and place on top of the foil. Then add a handful of peppers, onions and potatoes and wrap thoroughly around with the rest of the foil piece. Remember to press the sides upwards to prevent anything falling out of the packet.

Once the campfire is going and there are a few burnt pieces of wood, place the cooking grid on top. Then take the foil packets and lay them closely to each other on top of the grid. This BBQ recipe is really quick to make – grill for 25 minutes from both sides and the dish is ready! Make sure that you use fireproof gloves or claws to protect your hands.

Easy Potato Pancakes
Preparation: 15 minutes
Cooking Time: 20 minutes
Serves: 4 – 5
Ingredients:
- 1 1/2 kg of potatoes
- 1 large zucchini
- 4 large spring onions
- 5 garlic cloves
- 2 fresh eggs
- 200g of breadcrumbs (plus some to coat the pancakes in)
- ground sweet paprika
- whole cumin seeds
- salt
Instructions
Peel the homegrown potatoes and zucchini and wash them thoroughly. Then use fine grater to grate all potatoes and the zucchini to make a simple dough. You can also grate the garlic cloves into the mixture. When you finishe grating, put everything in a bowl and add finely chopped onions. Lastly, add two fresh eggs, paprika, cumin, a pinch of salt and 200g of breadcrumbs. Mix everything together until you have a nice dough smelling beautifully of the onions, garlic and spices. If you feel that the dough is too sticky or too runny, add another tbl spoon of the breadcrumbs.
Prepare the iron tawa on the stove, coat lightly with sunflower oil or a lard and begin making small pancakes using two table spoons. Scoop out a table spoon of the dough and make a small pancake, then coat the pancake lightly with breadcrumbs. Place the pancake on the tawa and fry gently for a couple of minutes from each side. Repeat these steps until all the dough is used.
