Carrot Cake Loaf Recipe
Delicious way to celebrate the spring!
Even though I am not a fan of sweets, this carrot cake loaf is my favourite! And even more so because it fits beautifully in the spring season and the Easter next month. Why not enjoy delicious home baking and the therapy of themed cake decorating at once!
After searching for an Easter inspired homemade carrot cake, I came across a beautifully and yummy-looking carrot cake loaf recipe by Sarah at The Gourmet Gourmand. The choice was made! I got all the necessary ingredients and here is the result! Even though the crust turned out a little more crunchy than I’d expect, overall this is probably one of the tastiest cake recipes I’ve made in a while. I made a few changes but the cake still came out perfect, moist with a scent of cinnamon and nutmeg. It’s really easy and fun so enjoy!

Carrot Cake Loaf Recipe
You’ll need:
Base:
3 cups of all purpose flour
2 cups of sugar
1 1/2 cups of vegetable oil
3 eggs
2 medium carrots (finely grated)
1 teaspoon of ground cinnamon
a pinch of ground nutmeg
a pinch of salt
1 pack of vanilla infused sugar
1 pack of baking powder
Icing:
1 pot of cream cheese
2 tbl spoons of butter
1 cup of icing sugar
1 Dr. Oetker tube of orange sugar decorating paste
1 Dr. Oetker tube of green sugar decorating paste
Instructions
Mix all dough ingredients in a bowl thoroughly and pour into a cake form. Pre-hear the oven to maximum temperature then lower down to 180 degrees and bake for an hour (I baked my carrot cake appropriately 1 hr and 15 minutes but this also depends on your oven type.
While the cake is baking, prepare the icing by mizing the cream cheese, butter and sugar together. If you didn’t find an orange decorating sugar paste, you can make your own. Mix red and yellow sugar paste or food coloring with a bit of the cream chese icing and you have the base for drawing the carrots!
When the cake is baked thoroughly, take it out of the oven and let it cool down completely. Then spread the cream cheese icing on top and decorate with simple carrot motifs using the paste/coloured ising.
