When making food to entertain in summer you want your recipes to be both easy and healthy! Today’s recipes will be about watermelons because they refresh and hydrate beautifully, and will last on the table for a while. You can easily leave cool slices out on a plate and watch them vanish. However, if you’re having children over it’s nice to make them a little more fun and full of vitamins! Especially nowdays it’s important to boost your immunity and remember your five-a-day so the healthy watermelon pizza just can’t go wrong!
Together with the pizza we’ll also be making a fresh watermelon salad. It fits beautifully with our easy homemade bread recipe or the marinated camembert! And of course – the homemade elderflower lemonade! Recently, I’ve shared a homemade elderflower syrup recipe and now it’s the time to enjoy it! Add a few slices of lemon to the elderflower cordial, some home-grown fresh mint and chilled sparkling water! Plus for those who enjoy a bit of twist – add 3 ice cubes of frozen white wine! Healthy Watermelon Pizza
Preparation time: 15 minutes
Serves: 4
You’ll need:
- small watermelon
- a handful of black/green seedless grapes
- ripe kiwi
- strawberries
- blueberries (optional to add blue to the colour palette)
- a teaspoon of honey
- a pot of full-fat white yoghurt

Instructions
Making the healthy watermelon pizza is so easy! Begin by washing the watermelon and cutting it in half to make two large circle slices. Cut each slice to make 6 small triangle pieces, 12 pieces in total. Then arrange the pieces on a plate to form a large pizza. The next step is to spread a couple of teaspoons of full-fat yoghurt on top of each piece. To make the slice a little sweeter, add honey to the yoghurt before spreading it on top of the watermelon.
The last step is to add the rest of the fruits. Wash them all, cut the grapes and kiwi in small pieces and leave the wild strawberries whole. If there is something I love, it’s walking around the garden picking fresh fruits and using them immediately for a recipe. We’ve done the same with the home-grown wild strawberries for this recipe – I let the little one pick them. It’s ideal not just to make the cooking more fun and engaging for children, but also to educate them. Getting children to eat fruits can be challenging, however if they get excited it’s much easier! Let them plant the seeds, water the plant and watch it grow and produce fruits that they get to pick themselves and eat. It’s so much fun for everyone!
Before placing the plate on the table, put it in fridge for an hour to chill and decorate with some fresh berries or fresh home-grown mint.

Easy Watermelon Salad
Preparation time: 20 minutes
Serves: 4
You’ll need:
- the rest of the watermelon from the previous recipe
- a cup of cherry tomatoes
- one green pepper
- an avocado
- a block of feta cheese
- two teaspoons of balsamic vinegar
- a teaspoon of olive oil
- nuts and seeds (optional)
- black olives (optional to add some blue to the recipe)

Instructions
Cut all ingredients – watermelon, tomatoes, pepper, avocado and feta cheese in large cubes and add them to a salad bowl. Add balsamic vinegar and olive oil to the salad for better taste. There is no need to add salt because the feta cheese is already quite salty.
To make different varieties of the salad you can add all kinds of optional ingredients – nuts and seeds, olives, boiled egg, tinned tuna or couscous.
